Ripe breadfruit pie or hamburger pie

The breadfruit tree is found in abundance in the Pacific. When in season, breadfruit makes a lovely change to bananas in recipes. Ripe breadfruit, in particular, add a unique flavor to pastries. The breadfruit for this recipe should be very ripe and soft.

Ingredients

  • 1/2 cup butter or margarine
  • 2 eggs
  • 1 teaspoon of baking powder
  • 2 cups flour
  • 1 cup of mature bread puree
  • 1 cup of sugar
  • teaspoon of vanilla
  • 1 teaspoon of baking soda
  • cup of milk

method

  • Beat butter and sugar until creamy
  • Add the vanilla and beat in the eggs, the eggs should be added one at a time.
  • Sift the flour and baking powder and reserve.
  • Mix baking soda with milk.
  • Mix the breadfruit with the butter, sugar, egg and baking soda.
  • Stir until well blended and pour the mixture into a well-greased pan.
  • Bake for about 45 minutes at 160 degrees Celsius (325 F) or until cooked.

Variation

Pour the prepared mixture into burger patties and cook for 20 minutes or until golden. Top with vanilla frosting and serve with ice cream (optional)

This is a nice change to the banana cake that is so common. Substituting banana for the breadfruit gives the cake a unique flavor.
